Details:
This indicator is for measuring the non-room revenue for a hotel, as a % of the total revenue. Non-room revenue could come from breakfast, restaurants, vending machines, shops etc.
It is in the interest of the management team to maximize non-room revenue. The % of non-room revenue helps managers to plan and organise products and services that will maximize their profits (e.g. in room dining, spa and leisure centre etc.)

Formula:
Non-room revenue/total hotel revenue x 100

KPI Expert Example:
A hotel makes a total of $40 000 a month, $5000 from the restaurant, $2000 from the internet café bar, and $33 000 from rooms.
In this case $7000 is non room revenue
7000/40 000 x 100 = 17.5% non room revenue

The total has set a KPI of 25% non room revenue for the next quarter, due to the opening of a new restaurant. Offers have been included in the room package to attract customers to consume from the new restaurant (e.g. 50% discount).
