There are some standard security KPIs in Strategy2Act library, you might want to have a look at those ready-to-use scorecards.
And for sure the best idea is to pass through out the natural route to identify KPIs, e.g. understand main security threats, and your possible response to them. You might also need to build a Balanced Scorecard with good strategy map in order to understand how those security risks are related to the guests value and comfort in your hotel, as well as with financial outcomes.
Last, but not least: have a look at the hotel Balanced Scorecard here, it will give you an example of how such scorecards can be designed.
