It is not really clear what kind of image capture you mean. I assume that if you mention enterprise content management, then it is something similar to digitalising papers into PDF format.

In this case relevant KPI is "Time needed to process one document".

The next step you need to do is to do a bottle neck analysis, e.g. find the step of the image capture process that takes the most of your resources.
